restaurant of Guinea, lit by a single disk, is decorated in warm

GUINEA
RICE
With
Peanut Sauce**
2
tablespoons peanut or vegetable oil
1 cup chopped onions
1 clove garlic, minced
1/4 teaspoon dried ground red peppers
1 cup chunk-style peanut butter
1 & 1/4 cups chicken or beef broth
4 cups hot cooked rice
Heat
the oil in a saucepan; sauté the onions and garlic 10 minutes, stirring
frequently. Blend in the red peppers and peanut butter, then
the
broth. Cook over low heat 5 minutes, stirring frequently.
Pour over the rice.
6 Servings.
NOTE: 2 cups diced, cooked chicken or meat may be added to the sauce if
you like.
