HAWAI'I LOMI LOMI SALMON
Salmon with Tomatoes and Green Onions**

1 pound smoked salmon
1 pound tomatoes
1/4 cup chopped green onions

Taste the salmon - if it is very salty, soak it in water for 1 hour, then drain.

Remove the skin and bones of the salmon, then chop the fish.  Chill.  Peel and dice the tomatoes and green onions.  Combine with the salmon.  Place 2 ice cubes in the center of the dish.  Service as a cocktail spread, or on individual plates as a first course.

6 to 8 Servings.


HONOLULU COOLER

Juice 1/2 lime
1 jigger (1 & 1/2oz.) Southern Comfort
Hawaiian pineapple juice

Pack tall glass with cracked ice.  Add lime juice, Southern Comfort.  Fill with pineapple juice; stir.
