The focal point of the Millstone Restaurant, which represents New England, is a vast, 19th Century painted panorama of New Bedford whalers.  Harpoons and scrimshaw decorate the rooms.  An open kitchen permits diners to watch the preparation of a variety of Yankee dishes.*

NEW ENGLAND CLAM CHOWDER
Clams in a Salted Cream Sauce**

3 dozen chowder clams or two 10 & 1/2 ounce cans of minced clams
2 bottles clam juice
1/4 pound salt pork, diced
1 & 1/2 cups chopped onions
3 cups diced raw potatoes
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons cornstarch
2 cups light cream
2 cups milk
2 tablespoons butter
1/4 teaspoon paprika

Wash and scrub the fresh clams, place in a skillet, cover and cook over low heat until the shells open.  Discard any clams that do not open.  Strain and measure the liquid in the pan.  Add enough bottled clam juice to make 4 cups.  Grind the clams.  If canned clams are used, drain, measure liquid and add enough bottle clam juice to make 4 cups.

Fry the salt pok in a saucepan until golden brown.  Remove the pork bits with a slotted spoon and reserve.  Pour off all but 1/4 cup fat.  Add the onions and sauté 5 minutes.  Add the clam liquid, potatoes, pork bits, salt, and pepper.  Bring to a boil and cook over low heat 15 minutes.  Mix the cornstarch with a little cream and add to the soup with all the cream and the milk.  Bring to a boil, stirring steadily.  Add the clams and butter.  Cook 3 minutes.  Taste for seasoning and serve sprinkled with the paprika.

8 to 10 Servings.


COMFORT OLD FASHIONED
Southern Comfort's take on the Old Fashioned***

This drink's better flavor will make it a top fashion in your home, too.

Dash Angostura bitters
1/2oz. water
1/2 teaspoon sugar (optional)
1 jigger (1 & 1/2oz.) Southern Comfort

Stir bitters, sugar, water in glass.  Add ice cubes; pour in Southern Comfort.  Top with a twist of lemon peel, orange slice, and a cherry.
